Gluten free Vegan Pancakes

This is a great recipe for a delicious breakfast, top it off with coconut cream or yoghurt mixed nuts, seeds, buckwheat granola, coconut flakes, berries, fruit, super foods, nut butter, my health "Nutella" and so much more. These also doubles up as a great snack, normally when i make these I make a double batch and hold the extra pancakes in the fridge and use them as snacks throughout my week. They are a great replacement for rice cakes or an alternative for vegan, gluten free, pre/post exercise snacking. This recipe is great for weight management programs as well as cardiovascular health plans and so much more.

Ingredients

INGREDIENTS

1 cup rice flour

1 cup oat flour or buckwheat flour (I use half & half normally)

2 teaspoons gluten-free baking powder

1/2 tsp of vanilla powder (NUA Naturals)

1 teaspoon ground cinnamon (optional)

1 cup nut milk (250 ml)

2 bananas

coconut oil to grease your pan

Directions

1Mix dry ingredients in a bowl ( two types of flour, baking powder)

2In a blender mix all other ingredients together until it's a smooth paste/liquid (milk, bananas, vanilla, cinnamon).

3Combine dry and wet ingredients with a whisk or with a wood spoon until smooth.

4Place ¼ cup of the thick but smooth batter in a hot pan lightly greased with coconut oil and cook for about two minutes on each side.
